In a bowl, mix the cabbage, cilantro, salt, pepper and the juice of a lime. Reserve.

In a pan on medium-high heat, drizzle 1 tbsp olive oil.

Add the jackfruit. Cook for 5 minutes. Add the bbq sauce. Cook for 10 minutes.

In a pan on medium-high heat, drizzle olive oil, and toast the buns

To the bun, add the shredded lettuce and bbq jackfruit. Top with the red cabbage. Add the top of the bun.
